500g pork mince; dash of fish sauce; 3 tbsps of Thai red curry paste; 1 tbsp dark honey; bunch of spring onions finely chopped; small bunch of chopped fresh coriander, sweet chilli sauce & lime wedges (to serve)
1. In a bowl, mix the mince with spring onions, coriander, honey, Thai red curry paste and a dash of fish sauce. Mix until mince is thoroughly coated and all ingredients are sticky.
2. Using your hands separate the mixture into 1, and form into thick disc shapes.Meanwhile heat some oil in a pan until hot.
3. Fry the patties in a pan for 5 minutes each side, as many as will comfortably fit, until cooked through and browned.(these patties also taste great barbequed, great for those private pool villas in Phuket, just remember to adjust your cooking time for the BBQ)
4. Serve with sweet chilli sauce and lime wedges. It also tastes great with a herb, spring onion and cucumber salad.
